What defines "Meat Quality"?
For many - safety, taste, and cost are the primary, or even sole considerations. For others, the pursuit of genuine meat character takes a meandering path down the twisted and interconnecting trails of holistic quality dimensions.
"Holistic Quality" may sound like a code-word or synonym for "Organic" - far from it. Holistic Meat Quality (HMQ) is a new scientific framework to address the complexities of understanding the quality of any meat product, from any system, from anywhere in the world. Indeed, the model can even be used to interpret the quality of non-animal protein meat alternatives.
The model is founded on an ever expanding tree of hierarchical elements of quality. Included are 11 sets of universal meat quality criterion, many of which must then be considered across scales of time and space, and discussed within a variety of complex contexts.
